Ingredients:
1 cup cooked couscous
1 cucumber, diced
1 bell pepper, diced
2 cups grape tomatoes, halved
1/4 cup chopped parsley
1/2 cup olive oil
1/4 cup balsamic vinegar
1 T sugar
salt and pepper to taste
1/2 cup feta cheese
Directions:
Combine vegetables with couscous. Whisk together olive oil, balsamic, and sugar. Season with salt and pepper. Toss with couscous mix. Chill before serving. Top with feta cheese.
