Zucchini Bread

Ingredients:
3 eggs
1 3/4 cup sugar
2 cups grated zucchini
2 sticks butter, melted
2 tsp vanilla
3 cups flour
2 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 cup walnuts

Directions:
Preheat oven to 325. Grease two loaf pans.
In a bowl, mix together eggs and sugar. Add in zucchini, butter, and vanilla.
In another bowl, combine flour, cinnamon, nutmeg, baking soda and powder, and salt.
Add dry ingredients to sugar mixture and blend until just combined. Add in the nuts.
Divide into loaf pans. Bake for 1 hour.
Let cool 10 minutes then remove to wire rack to cool completely.
