Tomato Leek Casserole

What a great way to use your leeks in one simple meal!

Leeks layered with tomato slices and mutz and topped with crushed crackers and dried herbs. Delish :)

Ingredients:
  • 1/2 cup crackers of your choice
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 4-6 leeks, sliced
  • 1 1/2 pounds tomatoes sliced
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup butter, melted
Directions:
  • Preheat oven to 350
  • In a small bowl mix crushed crackers and herbs
  • Wash leeks thoroughly and removed the ends
  • Place leeks in the bottom of a large, greased baking dish
  • Layer with tomatoes and mozzarella cheese
  • Top with crushed cracker mixture
  • Drizzle with melted butter
  • Bake for 30 minutes or until golden brown
  • Enjoy!
This is a great dish to be creative with. If you aren't fond of these herbs feel free to change it up and add fresh herbs. Parsley works great!
