Leeks layered with tomato slices and mutz and topped with crushed crackers and dried herbs. Delish :)
Ingredients:
- 1/2 cup crackers of your choice
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried sage
- 4-6 leeks, sliced
- 1 1/2 pounds tomatoes sliced
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup butter, melted
- Preheat oven to 350
- In a small bowl mix crushed crackers and herbs
- Wash leeks thoroughly and removed the ends
- Place leeks in the bottom of a large, greased baking dish
- Layer with tomatoes and mozzarella cheese
- Top with crushed cracker mixture
- Drizzle with melted butter
- Bake for 30 minutes or until golden brown
