Ingredients:
Dressing
1/4 cup orange juice
1/4 cup pineapple juice
1/4 cup lime juice
Salad
1 lb shrimp, peeled and deveined
1 medium cucumber
1/4 cup cilantro
2 jalapenos, seeded and chopped
1/4 cup sliced red onion
1 cup sliced grapefruit(if desired)
salt
Directions:
Bring a medium pot filled halfway with water to a boil.
Add in the shrimp and cook for 2 minutes. Drain, add ice, and put in fridge.
Spiralize the cucumber and pat dry.
In a medium bowl, whisk together the dressing ingredients.
In a large bowl, add in the cucumber, jalapeno, cilantro, onion, and grapefruit and toss together.
Add in the shrimp and dressing and mix well to combine. Season with salt.

Broccoli Tots
This recipe is much like the zucchini tots recipe I posted previously but it is so delicious you can add any veggie and it will be a new favorite.
Ingredients:
1 bunch broccoli cut into equal sized florets, around 3-4 cups
1 cup sharp cheddar cheese, shredded
1/3 cup chopped shallots
1/2 cup breadcrumbs
1 T parsley, chopped
2 eggs
salt and pepper to taste
Directions:
Preheat oven to 400 degrees.
Place broccoli in a sauce pan and add about an inch of water. Bring to a boil and cook until broccoli is easily pierced. Drain and set aside to cool.
Finely chop the broccoli.
In a large bowl, combine all the ingredients and season with salt and pepper. Stir until well mixed.
Spray a muffin tin(I used mini muffins) and spoon mixture into each spot, pressing down as you do.
Bake for 18-20 minutes.
