Balsamic Asparagus and Shitake Mushrooms
You will need:
1 pint shitake mushrooms
1 bunch asparagus
2 cloves garlic
2 Tbsp. olive oil
1/4 cup balsamic vinegar
salt and pepper to taste
Directions:
Cut of bottom of asparagus spears and discard (about 1 inch from the bottom)
Cut the asparagus spears in half
Cut the shitake mushrooms into slices
Mince the cloves of garlic
Heat olive oil in a skillit
Add garlic to the pan when it is hot. Saute for about 1 minute
Add in the asparagus and mushrooms.
Add the balsamic vinegar and salt and pepper
Saute until asparagus is tender, about 5-7 minutes
Serve and enjoy!
