Balsamic Asparagus and Mushroom

Balsamic Asparagus and Shitake Mushrooms

You will need:
1 pint shitake mushrooms
1 bunch asparagus
2 cloves garlic
2 Tbsp. olive oil
1/4 cup balsamic vinegar
salt and pepper to taste

Directions:
Cut of bottom of asparagus spears and discard (about 1 inch from the bottom)
Cut the asparagus spears in half
Cut the shitake mushrooms into slices
Mince the cloves of garlic
Heat olive oil in a skillit
Add garlic to the pan when it is hot. Saute for about 1 minute
Add in the asparagus and mushrooms.
Add the balsamic vinegar and salt and pepper
Saute until asparagus is tender, about 5-7 minutes
Serve and enjoy!

Lemon Parmesan Roasted Broccoli and Cauliflower

Lemon and Parmesan Roasted Broccoli and Cauliflower.

You will need:

1 head broccoli
1 head cauliflower
5 Tbsp olive oil
1 1/2 tsp. salt
1/2 tsp. pepper
1-2 lemons
1/3 cup freshly grated parmesan cheese

Directions:

Cut broccoli and cauliflower into florets and toss with olive oil
Spread the vegetables out onto a foiled baking sheet
Sprinkle with salt and pepper
Pour freshly squeezed lemon juice onto the vegetables
Sprinkle the freshly grated parmesan on top
Bake at 425 degrees F for 20-25 min

New Orchards!






First we order the trees and we store them in the refrigerator until the fields are prepared for spring planting. We are planting 27 different apple varieties.
The roots of the trees are covered in wet wood shavings so they don't dry out before planting.

Dandee Red Variety

Honey Crisp Variety

The roots of the trees have to be soaked before planting. Farmer Dale shows us how it's done.

 The rows are measured out by twine to make sure we plant them in straight rows.


The type of trees we are planting are called dwarf apple trees. Farmer Dale explains how you create a dwarf apple tree by grafting a regular tree top to a dwarf root stalk. We use this type of tree because it produces apples in a shorter period of growing time and is easier and safer for our customers and field staff to pick from.


Farmer Dale digs the hole for the roots of the tree. As he told us in the video above the soil must cover the roots but not any higher.




 These trees will be ready for picking in 2-3 years. We can't wait!
